Catching up...
1. I am proud to say that my 2 1/2 year old is now potty trained. Now watch- I say that and everything will backfire. I probably just jinxed myself. Anyway- 2 days, no accidents, and she recognizes the feeling and has told us that she has to go. YAY for MAYA!!!
2. My dad is an inductee to the Varsity T (University of Toledo)Hall of Fame for his accomplishments in AA and AAA baseball. We have a banquet dinner later on this month. Must get a LBD. (little black dress) tee hee hee
3. Ben's band has a gig this weekend at a cool, very well known Christian Coffee House in the area. Excited to go hang out and listen. Ok- of course for the coffee too!
4. Our dance team girls are getting ready for a halftime show at a local college basketball game. We are busy getting ready for this.
5. I made this for dinner last night and I must admit- It was quite fabulous. It's one of my very favorite Pampered Chef recipes! Not to mention- breakfast for dinner is a great way to go every now and then!
6. I don't have to do 10 because it's Wednesday. Here's the recipe!
Monte Christo Casserole
Ingredients:
1 cup milk
6 eggs
2 packages (12.5 oz each) plain frozen french toast(thawed)
1 cup deli baked ham
1 cup deli baked turkey
1 cup shredded swiss cheese
1/4 cup snipped fresh parsley
powdered sugar(there it is again)
2 cups sliced strawberries
1/2 cup strawberry ice cream topping.
Directions:
Preheat oven to 375. Cook milk in microwave until hot. Whisk eggs in a small bowl. Mix with hot milk until blended. Set aside. Cut french toast into 3/4 inch cubes. Place in large mixing bowl. Pour egg mixture over cubes and mix gently set aside.
Dice ham and turkey. Grate cheese and snip parsley. Combine all of these into a bowl and mix well. Spoon half the french toast mixture evenly over bottom of a rectangular baker. Top with meat and cheese mixture. Spoon remaining french toast mixture over top.
Bake 30-35 minutes or until light golden brown and set in the center. Let stand for about 10 minutes. Sprinkle with powdered sugar.
Slice strawberries and combine them with ice cream topping. You can either top each piece of the casserole with this or use it as dipping sauce on the side. Can I say heavenly!
Things I cheat- dried parsley, frozen strawberries, Aunt Jemima french toast boxes, Kraft(already shredded) swiss cheese.

that sounded really yummy till i saw it had strawberries and whipcream....with ham? that just seems like a weird combo!
i do love breakfast foods though - we had crepes this morning and they were so yummy!

So, I just printed out this recipe and will let you know how it goes... love Pampered Chef stuff. i have considered becoming a consultant just so I could get more of their stuff. hee-hee.
